I have a piri piri pepper plant which has been doing quite well in my a partment. I've kept it watered, in sunlight, and it has been growing and enlarging just fine.

In the last 2 weeks, the green leaves have shriveled and begin to become very brittle.

I think it may be the change in the apt environment to cold as my girlfriend has been running the ac a lot for the last few weeks, but I don't know.

Any advice?

I don't see a picture, but, it makes sense that some change has occured and it doesn't like it. Move it to a protected location and don't over water it. Good luck.

Peppers HATE cool air. Can you get it outside onto a balcony or something? At least get it away from the direct blast of the a/c?
