Burdock is a bad word right now for me. In 2009 I dug one out - it was huge. Everyone warned me to make sure I got all the roots. I didn't see anything else till last year, and I ignored it. Now, there are about 7 Burdock plants within 9 square feet of the original, and one of them is over 10 ft tall, growing right through my Japanese Maple.

So if you're wondering how easy these are to grow, don't worry. I'm sure you could dump one head first onto your driveway and run over it with your car, and it would still find its way to a patch of dirt and give you and all your neighbours a year's worth of produce within a month

OP, I think most people responding are not really reading what you posted.
The plant is medicinal, useable, and correct me if I am wrong.
It tastes excellent. Grows strongly.
I guess in cow country it is hated.
Anyway, start out in pots, not in ground, in good soil mix. The leaves make good tea, and the roots are just as you said.
If you do not want it to reproduce, just don't let it flower: ie: main stem. It's a shoot that appears as plant matures and wants to to reproduce.
Gawd, should we just kill everything before it is researched?

Though I personally do not have experience with this plant, let me suggest reading the comments of 8 people who do. There are 2 positives, 3 neutrals, and, 3 negatives:
