Currently have a raised plant bed in front of the house with ugly rose bushes and a 7ft tall tree on the right side of the bed.

I want to get rid of everything. And plant 3 pygmy date palms evenly spaced out. Between the spacing, I would like to plant something but not sure what? There will be tons of space between the palms. Guessing about 3ft or so.

I can plant more palms instead? Say 5 instead of 3? But I would like to go with 3 since it's a lucky number. 4 is considered unlucky. 5 is considered neutral. (it's a Chinese thing).

The palms would probably look good just by themselves with some mulch to let each one stand out more.

OP why not check with your local nursery personnel that knows your local area best. You'll need something that is compatible with the palms as each may have different watering/care requirements.
Big box Garden Centers I would avoid for information, go to a local nursery or your Agriculture extension service for advice.
