I want to plant various tomatoes and peppers.
I have been using garden soil and dirt mix in plastic cups, but want to try peat pellets next time.
I do 2 stages, indoor from seeds, then plant the seedlings outdoors.
What size of peat pellets do I really need?
According to some amazon comments people use 36x36mm pellets, while the 60x90mm pellets are advertised as they are for tomatoes.

While you may get better advice on what you actually need, I'll throw out there that I use the 60mm pellets for tomatoes (and peppers too). It seems to give them more room to grow (I saw on the labeling that it helps develop stronger root system; makes sense to me, but then don't know that for sure).

One other thing is that to me, the larger pellets are so much easier to work with. After adding the water to them, the larger pellets expand real nicely and are ready for planting. For the smaller pellets you got to draw back the netting and fluff them up more (more preparation time before planting. I always have to drain a lot of water from them--after adding the recommended amt-- while the larger pellets soak everything right up. It's less messy). At least that's been my experience with it (if I didn't have so many seedlings, I'd do all of them in the 60mm!!).
