Beets. Light soil to which I add bonemeal. Plant seeds water and you have beet greens. After that you get sweet tender beets. Easy, yummy, don't take up much room.

I might give them a try next spring. I always buy mine at the farmers market. In fact I got some today. It is the last of the season so I have to treat them like gold.
I think my favorite veggie to grow has to be tomatoes or should I say favorite fruit? I love peppers as well. Of course both of them grow pretty well here, so I can be proud of what I see in the garden.
Peas and beans because they grow so fast, and I can munch on them right there in the garden while I'm watering and weeding. Also, tendrils are beautiful to look at.

Never had a beet? From the grocery store they can taste awful. They're supposed to be sweet--hence the addition of bone meal.
All I do is cut the leaves off and boil the beets until you can pierce them with a fork. Put them in the sink and rub the skins off. I use a regular table knife but first I slit the skin with a sharp knife to get it started.
Slice the warm beets and serve with butter.
I found some organic beets recently that were as good as home grown. The secret is all in the soil. Sandy soil like you'd grow carrots in and with a bit of bone meal to sweeten it and make them grow.
