This is the first year I've had them.
Every one that I pull up intending to eat is too difficult to eat.
I've pulled little ones and bigger ones. There are all too tough to eat.
What's going on?

Usually you cut the greens in early spring to use like scallions or chives. Then cut and break apart the top set bulbs from mid-summer to fall and use as you would chives or garlic. As a kid my grandparents grew them and I don't remember eating the bottoms/bulb of them.

If they're too tough to eat it means you are harvesting them way too soon, they aren't ready for harvest yet.

What month did you plant them? They might be the type of walking onions that need to stay in the ground for two years before they're mature and soft enough to dig up for eating.
