Eastern Tennessee might be worth looking into if you're still interested. The summers can be hot at times but not nearly as hot as middle and west Tennessee can get. I grew up in Knoxville and went to high school in a small town after moving. Currently almost halfway between Knoxville and Chattanooga. Loudon and McMinn counties both have a mid size town (Lenoir city and Athens respectively) and are within an hour of some of the attractions you mentioned. Knoxville zoo, gatlinburg, gsm national park, movie theaters, Tennessee theatre in and around Knox and lookout mtn, Tennessee aquarium, ruby falls, ocoee river, etc. around Chattanooga)...also, winters here can be mild but there can also be some cold stretches. Usually December-February temps will get to 20s and get above freezing during the day. If it snows, it's a couple times a year and only an inch or so at a time though of course there is the occasional heavy snowfall, and by heavy I mean 4 inches or so. hope this makes sense and helps.
