We are moving in April, from Washington State to Florida, using a 26' rental truck. We contemplating towing our Honda CRV. How hard is it finding hotels to park and turn around at, and what other issues to know about. Anybody with experience doing this, your feedback would be greatly appreciated.

Are you planning to rent or buy the dolly?

Not hard at all if you limit yourself to the places outside of the cities.

Try it locally now with your car.
Drive down I-5 past Tacoma and imagine you needed fuel or a motel.
See where/how you can do so by "driving through" those facilities then back onto the highway.
Occasionally this will have you pay an extra nickle per gallon. Don't fight it.

By the time you get to Bakersfield you'll be an expert.

If the CR-V has AWD, you must use a car carrier, not a dolly. Otherwise you risk damage to the AWD mechanism. Also U-Haul or Penske will refuse to give you a dolly for an AWD vehicle.

I have a thread on this I wrote this summer. It can be done. Yes, if you have 4 wheel drive you must use a carrier. You will need to gas up at truck stops. Call the hotels in advance and ask if they have truck parking. Don't even think of backing up. It will be much slower. But you can do it.

Having driven towing loaded horse trailers and also loaded round hay bale carriers, I can tell you there's always a place to turn around. Just consider parking in a nearby shopping center. Fueling up at truck stops is great advise. You can do it!!
