So I ended up taking I-40 from Chicago all the way to LA. I guess that's the entire length of Route 66. Overall, it was pretty uneventful, which was what I was looking for. I did experience some hail going through TX (damaged car on trailer) but it went well!

Utah in particular has a very long stretch of ~110 miles on I-70 which states "no services for next 110 miles." You don't want to get stranded on a stretch like that with no cell reception as I did not get cell reception in that stretch.

Utah and Colorado are just not good for an inexperienced driver. Factor in a trailer and car on that trailer and I think you're taking unnecessary risk.
A few years back, I took I-40 from Memphis to San Francisco in a Penske, and I have never been so bored in my life as i was on I-40. Don't go during Tornado season, either. I promise you that and I will spare you the details.
