Do any US cities have dense brick housing similar to the example above? I know Baltimore and Boston have brick rowhouses, but iv'e always found them to look pretty square and spartan compared to the Victorian gabled style of Toronto's vernacular.

Boston's and Baltimore's [and other cities] rowhouses are of the Federalist style-not the Victorian.
Canada first and foremost is British/English and would have been directly influenced by that.
American cities would have been influenced by our republicanist ideals. Most notably through the architect Charles Bulfinch.
