Looking into E. Tennessee, it appears to be a very conservative area of the country. Not to say we couldn't fit in anywhere, but it does make us stop and think about an area like that.

That's true, but Chattanooga, and any of the "bigger" cities would be a bit more progressive.
I wouldn't recommend living there, but Memphis is probably anything but conservative - at least that has been my experience.

You guys don't seem quite so ready to make the move as you think. You have to quit finding things wrong with places. No place is perfect. Most any biggish city has "liberals", even in conservative areas.

Maybe we're not coming across like we want to. We enjoy where we live, but have lived in the Pacific Northwest for all of our lives. It's a great place, and we'll probably retire here someday. But we're in our 30's and ready to experience something new within reason. No- we don't care to move to certain areas, but we're willing to listen to what people have to say.
We're not interested in depressed areas, or overly-conservative areas. Who would be? Other than that, we're ready for an adventure and are open to just about anything.

Check out Pittsburgh, Madison WI, Minneapolis-St Paul, Ann Arbor MI, or Kansas City MO.
Pittsburgh and KC are the cheapest of those places. KC in particular should have plenty of teaching jobs. And as long as you dont live on the Kansas side the area is at least middle of the road politically. Liberal professionals live in the city of KC in the nice older areas, while more conservative folks live in the McMansion suburbs around the area. The same is probably true of the other cities I named. Madison is notorious for being very progressive and liberal.

I dont know how much you like the cold, but I fell in love with the ofallon area of IL. Have not actually lived there but we thought we were going to transfer to scott airforce base. took a 2wk vacation there and did a lot of research around sept. I dont know if there are any teaching positions available but Ofallon itself has some of the best schools and taxes are a little high because of that. I personally thought it was worth it for all you get in the community. lots of parks with free entertainment, public pools at very reasonable prices and almost a "leave it to beaver" atmosphere in todays times. most families had both the husband and wife working, even the "ghetto" areas were clean and people were exceptionally nice. Traffic is not bad an the "shopping city" is like 10 minutes away. I cant remember the name of that city but you could live there for pretty cheap. because it is so much of a family atmosphere theres everything you can think of for the kids either in ofallon or the 2 other neighboring cities. then when you want some extra culture and city life st. louis is about 20 min away across the bridge. We ended up having a choice between there and Beaumont Tx. I only chose Beumont because I dont like the cold.  anyway Teachers are paid really well and houses were extremely reasonable. Just watch out for how much they tax you.

If it wasn't so cold, I would seriously consider moving to the Twin Cities.

How about a city like Denver? It seems to offer many of the things that you are seeking in a city.Atlanta is another area that might offer some of what you are seeking.
