I found some interesting demographic information about children under 18, which is available through the Anne E. Casey Foundation's Kids Count Data Center. It's very telling to compare the data with the 2010 census to see how demographics are changing. For example, according to the 2010 census, the state of California is 37.6% Hispanic or Latino, while 50% of children under 18 are Hispanic or Latino. for more information on what you wrote you could check and see what the next 5-10 states to become minority - majority are.
