I-70 in Utah and Western Colorado was absolutely spectacular. Also I-24 in Tennessee and the Blue Ridge Parkway. Drove many backroads in Northern Arizona and Southern Utah that were breathtaking as well. I-40 in North Carolina is a great drive too, as well as I-64 in Eastern Kentucky and West Virginia, as well as I-79. I-68 through Maryland and West Virginia is amazing too.
1-71 on the kentucky side in Cincinnati is breathtaking once you go on top of the hill on the freeway you will see the best view of a downtown you have ever in your life seen.
Another Highway 1 Pacific Coast Highway vote here! Nothing more beautiful than driving along the Big Sur Coastline.
My favorite stretch is from SF down to Big Sur... just non-stopped, jaw dropping beauty. If you ever need to recenter yourself and just experience something beautiful, that's the place to do it.
Blasting down PCH in my S2000 with the top down and the stereo up at sunset was one of the most wonderful experiences I've ever had... I went top-down the whole way from the end of Geary in SF, all the way back to LA in November

Even exiting Big Sur southbound is a pleasure. Just before entering Cambria, there is a colony of hundreds of Sea Lions setting up camp on the rocks. The Park Service has set up an observation deck. From there, Cambria, Hearst Castle, Moro Bay, then gently back to reality with San Luis Obispo, Pismo, Santa Barbara, Ventura & Malibu.
340 in Maui is pretty nice as well.
