From Upstate NY, I'd say Salt Potatoes or Potato Chips with either Buffalo Wings, Beef on Weck, Spiedies or a Garbage Plate and a salad with 1000 Islands Dressing. For dessert, Half Moon/Black and White cookies.

Those are just elements of meals, not specific dishes. The other options I thought of were she-crab soup, Hoppin' John, or mustard-based BBQ.

Oklahoma: How about a Native American dish? - Indian taco, tanchi labona (corn soup), banaha (cornmeal wrapped in corn shuck), wild onion & eggs, squash. SO GOOD.

I think a couple of these had been mentioned but I was thinking the same things.

MD- of course steamed crabs or crab cakes
DE- chicken and dumplins
VA- Ham
NC- Eastern NC BBQ
SC- shrimp & Grits
FL- Stone Crab Claws

Great topic!

Some possible options in order of what I personally like best and/or seems best for a banquet.

California: Cioppino with some sourdough or crackers, California Roll, Cobb Salad, Mission Burrito, Carne Asada Fries; also some wine from California would make sense

New York: Lobster Newberg, Waldorf Salad, Buffalo Wings, Delmonico's Steak, Penne Alla Vodka, Eggs Benedict, Pasta Primavera, Vichysoisse

Oh...and for those who don't know, Eastern NC BBQ is pulled or chopped pork in a vinegar based sauce.
