Oddly, we have a lot of locally owned Thai and Vietnamese restaurants - pass the Pho, please!
Pho is turning into the unofficial state dish of Texas cities. Vietnamese places everywhere!

Agreed. Vietnamese food is big in San Francisco, but lags behind styles of Chinese and Japanese. In Houston, I found Vietnamese to be the dominant Asian food--especially casual Pho places.

Of course sea food; but anything with grits, especially shrimp and gravy on grits.

I'm in Santa Clara, CA in Silicon Valley. Can't claim our own specialty, but we've got techies here from all over the world who want a taste of home, so...

Korean BBQ (first time I ever had it was here - fun & yummy!)
Indian
Chinese
Japanese
and of course, our historical standby, Mexi-Cal
and always seafood, being by the SF Bay
