Because most immigrant to Latin America in the period of Europe emigration. From 1850 to 1970:
1.3 million Spanish moved to Argentina
825,000 to Mexico
240,000 to USA
harder to find numbers on other countries, but it was probably large in other Latin American countries.
Most Spaniards that emigrated during the last 100 years did so during the Spanish Civli War / to escape Franco's dictatorship. Most took refuge in Argentina and Mexico, as the post above notes.
1. Latin America countries were colonized by the Spanish. They spoke Spanish in those countries and that would make it easier for Spanish immigrants to assimilate.
2. They were on top of the caste system in Latin America.
3. By immigrating to Latin American countries, Spaniards didn't have to face ethnic discrimination from Anglo/North European Americans.

I believe that some went to Cuba, pre communism as well. In turn, Miami probably has people of strictly Spanish descent there.
I have met quite a number of expat Spaniards in the NYC area working for Spanish companies that have offices in the USA. But I don't know if there is a real Spaniard community besides this in the area.
