Searching for a move. Although this is preemptive, backstory is that me and my boyfriend are bored where we live. I like the beach so a coastal town is ideal with affordable living (LOL), personally I love the boardwalk and seafood, and museums (not a must).
An open minded community.
We are not worried about employment seeing that we work in the service industry. However a seasonal hotspot probably wouldn't do the trick.
Somewhere easy to get around would be nice.
Weather wise, less snow and less humidity the better.

You wouldn't have to worry about snow for a while and you will have to adjust some of the criteria, as it is very tough to get what you are looking for. Maybe something in Delaware or the Eastern shore of MD, as well as some sleeper location on the West Coast.
In the mean time, Ithaca may actually work until you can find what you are looking for.

But they're very seasonal and all but dry up in the winter months. Charleston or Savannah/Hilton Head operate year-round and stay fairly consistent in terms of the hotel/restaurant industry.

I went through the area this past March and the restaurants and bars were all open, motel prices were cheap,temps were cool and we had the beach to ourselves. if the op is looking for more of a city feel ya cant go wrong with Charleston or Savannah.

I know they're probably still open, but if one works for a hotel/restaurant in an "off season" location the odds are you'll have reduced hours in terms of scheduling (and lower paychecks if paid a typical hourly wage) and/or see massive dropoffs in tips with the significantly reduced traffic. The OP is looking for more consistency according to the initial post. I don't get the sense that either city has enough population to take up the slack for the missing tourists in off season.

Rhode Island? The only problem with Rhode Island is it's very cramped--lot's of people, not enough space, BUT the food is damn good, during the summer months there is no shortage of jobs, and the coastal towns are open minded. It may somewhat chilly as well.
