...and from what I've seen, get too far inland from the Pacific and California weather is really, really hot in the summer -- not at all the mild summer and winters that are typical of Mediterranean climates.
A typical Mediterranean summer is actually warm to hot, look st places like Madrid, Athens, Rome, ect...even Barcelona is much warmer than coastal CA.

Still doesn't take away the fact that California is the only U.S. state where a Mediterranean climate can be found.
The only state with a Mediterranean climate in the U.S. is California. Alabama and Florida definitely don't count.
What? "Mediterranean" certainly includes FRANCE, SPAIN, PORTUGAL, NORTHERN AFRICA, etc..
What the heck are you talking about? Mobile, Alabama (the home of the first Mardi Gras) was founded by the French (including small little cities like Bayou LeBatre, Dolphin Island, and many other enclaves, some some which still speak French), and Miami FLORIDA is FULL of SPANISH (remember Spain in on the Med SEA) culture and it's off shoots due to colonization and immigrants.
Only a fool would suggest that places like Mobile (a French name itself), or Miami FL (steeped in Spanish culture) don't have "Mediterranean" cultural underpinnings.....if you're talking about only WEATHER, of course your point is valid.
The OP stated she was looking for a "Mediterranean AMBIANCE", not "weather"....albeit she tailored her search to places not screaming hot.
It is ignorant to suggest or intimate that southern France,Spain, Portugal, Northern Africa etc and theri respective cultures AND CLIMATES are not "Mediterranean" in ambiance.
Cultures and climates of the "Mediterranean" are NOT monolithic, they are extremely diverse. Mediterranean ambiance is therefore not monolithic......only people who are undereducated or biased would assert such a specious assertion. Cultures of the Med range from that of Tripoli, to Cote d'Azur. Wake up.

If I'm not mistaken I think the op was referring to Mediterranean climate, which is a type of subtropical climate that has warm/cool rainy winters and hot dry summers, the only place that fits that definition is the west coast particularly California.
Perhaps my post was not descriptive enough. By "Mediterranean" -- which indeed does include a huge variety of cultures and climates -- I should have stated a locale that features warm summers but not excessively cold winters, lots of stucco, tile, palms, flowering shrubs, fountains, courtyards, and the like. Mountains and/or water would be nice but aren't absolutely necessary. Just a generalized Mediterranean ambiance, without extremes of climate. Unfortunately, I can't afford Santa Barbara! Many thanks to those who have given me some good suggestions.

Pretty sure the OP was referring to climate when they mentioned Mediterranean.
Also, not sure why you're bringing up other countries when we're talking about the U.S.

Northern CA does as well. It actually probably resembles the climate in the Mediterranean more so because of its cooler and wetter winters than SoCal.
Northern California (specifically far east bay, Dublin, Fairfield, Concord areas) has a climate that is almost identical to most of Spain and Italy. Any time of year look up and compare the weather of those places. There's a good chance it will be very similar.
