For large cities outside the west coast I would say:

Boston
Pittsburgh
Atlanta? Cincy?

Denver seems beautiful

I think the area around Miami is too. I have a thing for beaches and palm trees and tropical climates.

And for my 3rd.... Does Vegas count as west coast? Red Rock canyon near Vegas is great

I would also say Honolulu but I'm assuming you mean mainland only?

It depends on location

This is Evergreen about half an hour from downtown Denver. Evergreen and Genesee are the closest areas to Denver that fit the Colorado alpine stereotype.

Table Mountain on the Lakewood/Golden border about 12 miles west from downtown Denver this is where it starts to live up to the Colorado stereotype

Neighborhood about 15 minutes east of downtown Denver. It is very flat.

I think Chicago works very well as a Large City setting outside the West Coast.
Though it has been enhanced by man. It is still a awesome setting for a major city
Its shoreline along lake Michigan is a great setting especially for its downtown.

Anywhere is the coastal SE US (New Orleans, Houston, Savannah, Miami, etc). Lots of lush green vegetation/canopy, which is lively and green year-round.

Phoenix is actually pretty to me. Saguaros, wild flowers, mountain vistas, desert sunsets etc.

Reno is very pretty. Snow-capped Sierra mountains to the west. Yelbow desert hills to the East. Truckee River runs through downtown. The city is in the valley that is quite green and there are views and vista everywhere.

Salt lake city is also very pretty.
