What areas of the US are the best place to live that offer ample hiking/outdoor opportunities, close to large bodies of water, and under 2 hour's from a large city?
Lots of New England might fit the bill. Draw a circle on a map within a 120 mile radius from Boston and you can get just about all of that in Maine, New Hampshire, Massachusetts, Rhode island. All depends on how much you can afford to pay for stuff and if you can find work that you like.
There are also many towns upstate NY in the Catskills or along the Hudson that are a couple or hours or less drive from The Apple/ Look in Columbia, Greene, Ulster, Dutchess, and Rensselear counties.

Another NY sleeper may be Niagara County north of Buffalo, which is on Lake Ontario, is less than 2 hours from Toronto(can get radio stations from there in parts of the county) and has hiking due to state parks in the county. Niagara Falls Hiking & Trails | Niagara USA
