Growing up in Atlanta, we generally accepted the following without equivocation:

Deep South: Louisiana, Mississippi, Alabama, Florida, Georgia, South Carolina
Middle South: Arkansas, Tennessee, North Carolina
Upper South: Kentucky, West Virginia, Virginia

Not sure when the waters got muddied.

Seriously I think that would fulfill all your requirements. If you want to experience the highlights of the area, go eat at a hole in the wall bbq/tamale restaurant, travel US Route 61, go to a blues festival, visit a plantation, travel along the Mississippi river. If you like older music, this country produced Johnny Cash, Levon helm, BB King, Muddy Waters, Robert Johnson and countless other fathers of blues/folk music. It's definitely a unique area and a quintessential southern trip.
The delta area producing the blues players is one of the sweet spots of the deep south. Culturally rich in music and food.
