I am going to be driving from Lincoln, NE to Phoenix, AZ the 29th-30th. What is the best way to go about checking the weather for the whole trip? Just view the individual forecasts for each region? Or is there an easier/faster way? Thanks!

Just view the forecasts along the way. They will be wrong, even two days in advance. If there is any rain, it will be a spotty afternoon thundershower, which cant be predicted until a couple of hours in advance. Whatever the weather is today in each place, there is a 99% likelihood that it will be exactly the same when you get there, with only a temperature variation---either hot and sunny, or very hot and sunny.
