Living in Oklahoma I can see exactly what you are talking about. Another fascinating thing that I have experienced is going west to east across New Mexico and the Texas panhandle. At night on two lane highways as you travel east you get the sensation that you are going downhill. And you are.

It never happens in the day time and I've never had it happen on an interstate at night. But I specifically remember going on two lane roads from Raton, NM to Elk City, OK. Felt perpetually downhill even though it probably should be imperceptible. Over that distance you drop from almost 7,000 feet to just under 2,000 feet. During the day it looks and feels completely flat.

I moved from California to Georgia and I was shocked that no one here recycles. My apartments finally started recycling but it's so restricted to certain types of plastic only.
Other people referring to each other as "yes sir, yes maam" was also shocking to me. I am not complaining about this at all. It's very polite and people here are nice but they are much more formal than what I was used to in California. Maybe California was a little too laid back.
