Albuquerque, NM, near Santa Fe which I recommended earlier, was just named the number three most vegan/vegetarian friendly city in the US, behind only DC and Portland. Housing is somewhat affordable here, too. Maybe add Albuquerque to the list? I know I love it here(and I'm Vegan)

I'd say rural areas outside of Asheville and around Durham-Chapel Hill-Carrboro might work for you.
