Five crunchy Colorado towns ; not a full list by any means...Aspen,Boulder,Durango,Nederland,Manitou Springs..Just read that your full post,said you are considering grad school. revised in order West Only.. Boulder, Berkeley, Eugene OR, Santa Barbara,San Francisco.
FYI that is not just rumor and speculation that Boulder and Santa Barbara have amazing looking women everywhere.
Out of your list Denver,Seattle..both among the fittest/outdoors oriented/most educated large US cities.

I would have to agree with Seattle... that is where I'm heading within the next year. My daughter, who is studying environmental engineering, might follow a few years latter who would be your age... we're both outdoor enthusiasts, athletic and no hipsters.. LOL (we love granola bars.. not sure if we are cruncy)
I'd have to agree with Boulder, CO, or anywhere along the Front Range. In general, the west is much more "crunchy" than the Midwest or eastern states. But yes, the Pacific NW and NorCal is a sure bet.
Austin Texas? Maybe, but I'd say it's only "crunchy" around UT and SoCo.
All of these college towns are legitimate hippie havens compared to places like Boulder and Austin where there are a lot of "drugstore hippies".
The OP stated crunchy/outdoors/ granola, not hippie..yes there is a difference..FYI Boulder 25 years ago was more hippie than any US city save Berkeley..Boulder's been there done that..Eugene is what is known as hippiecrit just like Boulder and any other city..The only true hippies are only available on video stream..thank God. I can think of a few mountain towns here in CO..way off the grid where the die hards still exist though.
