In the 2010 Census, if someone declares themself as Central Asian (Kazakh, Uzbek, Tajik, Kyrgyz, Turkmen) or Arab (Yemeni, Omani, Saudi, etc.), what race are they then included into? White or Asian?

Ethnic Kazahks and Uzbeks while geographically from Asia and while some have Asiatic features here in the US they would probably not be considered "Asian" but rather Middle Eastern. While classified as Turkic, I have seen some Kazahks and Uzbeks that look Asian.

Central Asians are "Other Asian." and then there is a write in for the national origin or ethnic group - Mongolian, Kazakh, etc.

Arabs are whatever race they want to be - white, black, other Asian. If they don't feel comfortable with either of the first three, they can put down "Other Race" and write in Arab or Egyptian or Omani or Yemeni or whatever else.

Asian would make sense, seeing that they are from Asia.

I was a Census worker and Arabs could mark down "some other race" if they want and write their "race" in the boxes. When I went to some Mexican households, all of them assist that Hispanic or Mexican was their race, even after I told them Hispanic/latino is not consider a race for this year. Probably unlike the last census, this 2010 version doesn't force people to pick the races the form already have listed.

Central Asians belongs in the "other Asian" category.

Arabs ( who are not black, hispanic or asian) are most likely to put down White.
