Looking to do a day trip to the area from Raleigh for a hike next weekend. Probably can't make it all the way out to the western part of the state but there seem to be some cool state parks in the area. Any opinions on what places to check out? Did some research and it seemed like Hanging Rock, Pilot Mountain and Stone Mountain were the places to check out. Any of those that people prefer or any other suggestions?

Pilot Mountain isn't that great for hiking, Hanging Rock is good and Stone Mountain is even better.

I think all three you mentioned are solid choices, and I'd hit any of those before I started to branch out beyond them. If you're up for a longer and more strenuous hike at Pilot Mountain, you can hike from the mountain all the way down to the Yadkin River through a corridor that connects the river and mountain sections of the park. And I like the Moore's Wall loop at Hanging Rock. Stone Mountain's great too, but it would be a half hour farther away for you, so if it were me, I'd try the others first.

If you go to Hanging Rock, stop in Danbury at the Dan River Family Diner.

Stone Mountain State Park is pretty good, as is South Mountain State Park.

OBTW there is an NC State Park app for IPAD.

Hanging Rock Trail (Will be the most crowded)
Moore's Wall Loop Trail (Takes you to Moore's Knob, not as crowded as Hanging Rock)
Wolf Rock Trail (cuts off Hanging Rock Trail)

That's my pick, too. It's something like 4.5 miles, and it's a loop rather than a down-and-back like the Hanging Rock trail.

If you're looking for something longer, there's this, which combines the best of the trails into a 10-miler.
