As I mentioned in the OP, I was hoping this thread would be more about the lesser known places rather than the popular spots most people can find on their own. Places like Pete's Restaurant in Clemmons, or Ted's Kickin' Chicken in WS. Neither are much for atmosphere, but the food makes them well worth a visit.

Slappy’s (dipped fried chicken)
Thai Sawatdee (the one in the Teeter is great, but the Healy Drive location is better if you’re dining in.)
El Rancho Taqueria
Atelier (bakery)
Cin Cin Burger Bar
Bernardin’s or Spring House (for those fancier places)

GSO:
Smith Street Diner
Bahn Mi Saigon
Sticks and Stones
Giacamo’s (Italian deli)
(You covered a lot of my other spots already.)

Cin Cin Burger Bar!! I saw when that place opened and wanted to try it. I've heard good things. Unfortunately I had kind of forgotten about it. No more!

Bump to add a few more:

Little Tokyo on NC 68, near the Palladium. The best sushi I've had in the Triad area.

Athena Tavern on Stratford Road in WS. Excellent Greek food, and the live Greek music on Tuesday evenings is a huge win.

Chang Thai in Clemmons (near Tanglewood Park). Thai food at its best.

My favorites are Chang Thai in Clemmons (previously mentioned), Ichiban at Thruway (great family atmosphere, good food, nice people), Greek Guys off of Stratford Road (near Food Lion and Sheetz), and, for something more upscale, Mozelle's is wonderful.

Besides Lewis and Elm, and State Street Wine Company, are there any other places of similar concept in greensboro? Where you can just go in and order a glass or wine and sit and talk?

Rioja!, Marjaes, Tasting Room and Winestyles specifically. But really any place with a bar that serves wine.

The bars at both Printworks and Green Valley Grill are both nice. The wine selections are extensive.

Yes WineStyles at Friday is great. Live music very chill and relaxing scene! Grab dinner at Harpers then pop over to WineStyles for wine and entertainment!!!
