Unfortunately, after living here for 13 years there has only been one decent Cuban restaurant and it closed. The problem is that while the hispanic population is growing, Cuban is not in that mix. All ethnic restaurants batch Cuban food with other types. And while Montego Bay is not bad, it is a chain. I remember there was one in Clearwater when I lived there.
There is one restaurant on Tate Street which is fairly good. It is not a strict Cuban restaurant, more of Puerto Rican, but they do have a couple Cuban dishes.
It is called Jibaro, right across from Tate Street Coffee house and Design Archives beside UNCG.
Even if you do not find the right Cuban entree, their jibaros and empanadas are great.
Saw a Cuban restaurant tonight that I didn't realize existed ... we got Chinese takeout in an area we've never explored before and there was a little Cuban restaurant next door (closed on Sundays). Can't remember the name of it, but I know the address for Bamboo Garden is 2221 Fleming Road. It's a strip mall, and there's a Food Lion in the plaza.
According to the Yahoo Directory, Montego Bay restaurant on Market St. serves Caribbean, African and Cuban dishes.
Montego Bay Restaurant (http://www.montegobayrestaurant.com/ - broken link)
which is a) my fave restaurant, and b) out of business.
