Another vote for Asheville. A lovely small city with a ton of diverse eating options in the downtown. It's a fun place to walk around, as is Biltmore Village. Of course, Biltmore House is there as well. But it could easily take up an entire day and admission is rather expensive at this time of year.

As BeckyCat mentioned, Knoxville may be another option. It's about 1 1/2 miles north of Asheville. Their downtown has a few pockets of unique dining and shopping options. I'd definitely look it up online before going so you aren't wandering around the downtown aimlessly looking for things to do as it is very business/corporate centric.
