I miss the coast but we do have some nice lakes, streams and waterfalls here.

I am not a horsey person but

Croft State Park has a lot of horseback riding and events (Spartanburg)
Landrum SC is near Foothills Equestrian Nature Center in Tryon NC which is a big horse (hunter, jumper steeplechase) area.
There is also a place in Landrum but I can't think of the name of it that is a club where people ride.
Kings Mountain State Park also does I think as does Anne Springs Close Greenway near Fort Mill
