Depending upon where you're staying ("Lahaina" covers a pretty large area), you have lots of choices. Here are a few of our favorites:
IN LAHAINATOWN
Really nice:
Gerard's (French done island-style, great food and service, ask for a table on the porch)
Lahaina Grill (Pan-Pacific wine bar, consider eating at the bar for more casual fun)
Pacific 'o (kind of touristy, but a beautiful setting and good food)
More casual:
David Paul's Pacific Grill (just opened, great location, can eat outside, big menu)
Mala Tavern (not exactly in-town, but directly on the waterfront, behind Safeway)
IN THE RESORT AREAS
Ka'anapali (all casual):
Tia Juana (brand new Mexican at the resort entrance, just opened last week)
Hula Grill (great atmostphere in Whaler's Village, good live music, food okay, but on the beach)
Cane & Taro (should open tomorrow and be very good, great local chef with several restaurants)
Kapalua:
Pineapple Grill (beautiful views, good island food and service, at the Bay golf course entrance)
Sansei (casual, fun sushi and full Japanese menu near Honolua Store)
Kai (more elegant sushi inside the Ritz Carlton lobby)
Merriman's (amazing location on the rocky coast at Kapalua, consider sunset cocktails and pupus outside, dinner inside has been kind of unpredictable)
If someone else is picking up the tab and you don't mind shocking them, consider eating at Mama's Fish House on the north shore at Kuau Cove. (It's fairly convenient when you're headed to the airport, actually, and they serve lunch and dinner. Call for a reservation, though.) It's an amazing location and one of the most memorable spots on the island.
There are more, of course, but these are the places we go to all the time and the places that guests seem to enjoy. Feel free to ask if you have specific questions.
Enjoy your stay!

Reason: Added Mama's.
