Blue Cross suggested temporary plans - you have to renew every 6 months but for us, it would be $767 a month. Right now, I feel like we're paying 4 car payments.

You say you are paying around $400/mo rent to live in Asheville? That is incredibly cheap. Why are you complaining about high rent in the WNC thread?

$2100/mo is a bit of a squeeze for two people. If she has to get insurance anyway, why not up her hours. It doesn't seem like you are in danger of going over the $62,000 limit. Or are you saying you go over the limit for having your co-pays subsidized.
