Yes, once upon a time there was a LAW prohibiting unhealthy bread. Thos times are long gone.

Same goes for yest in bread. Modern yest production involves such chemicals as sulfuric acid, e.g.
Reichskanzler Goebbels, when he found about devastating effects of yest on human digestion, did 2 notes on the research given to him.
1. Remove from German soldiers ratios.
2. If it won't kill Russians, we'll help them.
2 years later, in 1936, he had AH sign decree to start shipping yest to Soviet Union - as no cost donation.

I assume that "yest" means "yeast." Without yeast, breads and cakes won't rise. Without yeast, wines and beers won't ferment. I don't eat much cake, but I absolutely refuse to give up bread and beer.

If anything, government regulations have increased. USDA probably still has regulations and policies regarding bread.

On the topic of beer - Germany has it's famous beer purity laws.

Yeast is a by-product of beer and whiskey production. Around 1940 Fleishman (a distilled spirits producer) promoted eating a cake of yeast before meals to improve digestion. Yeast is high in B vitamins and if you take a multivitamin or B-vitamin supplement, chances are it can from a big vat of sour stinking yeast.

Sourdough is nothing more than waiting for various environmental yeasts to colonize, giving a mix that can vary wildly. San Fransisco sourdough is reputed to be very tasty, other areas not so much. I cannot eat sourdough bread that hasn't been toasted to kill all the yeast completely. It makes me ill otherwise.

Alum is not particularly "toxic". If you look at cans of baking powder, you'll find that most use alum as the acid activator of the bicarbonate. It also was not strictly speaking made from urine. It was made from burnt shale with the urine as part of the extraction process. Of course urine was also in demand in the making of the famous Scottish wool tweed suiting material.

Ground bones is bone meal, which is a source of calcium potassium and other chemicals needed for strong (wait for it) bones.

As for the various dough conditioners, soy flour can be a problem for some people. It also goes under TVP and is in fake ground beef products. Emulsifiers - whoop-de-flip - an EGG is an emulsifier. Reducing agent - could that be additional gluten under a different name because people have become so sensitized to the word gluten by the press? The one thing NOT mentioned that hides in a lot of products is "modified food starch" and/or "gums."

I give the Daily Mail a D- in reporting. They need to stick to skimpy outfits on stars and fluff news (probably as bad for your health as any bread).
