Gotta go with the Knights. I'm a Patriots fan and New England has three Rutgers defensive backs. Devin McCourty for the win!

The Knight(s) win when Robert Redford hits the homerun

Again it depends upon the scenario, terrain, and weaponry/equipment available.

The most important aspect to answer any such question. The Germanic tribesman of 9AD defeated two highly trained roman legions by determining the scenario (damp rainy) and terrain (narrow ravine like path surrounded by wooded hills).

If its a game I surmise there are contextual variables to choose. If you went by mindset of the respective combatants 'rules of engagement' / philosophy, I'd take Viking > Samurai > Knight.

They would all have trained especially the Samuai who had a strict conduct code .supposed to lead their lives according to the ethic code of bushido ,Id go with them... as once a knight fell he couldnt get back up with his heavy armour.. and I imagine Vikings a bit uncouth and not trained in the same way, but of course I could be way off ... Samurai and Knights also came from nobility so would probably have much the same types of training, The Vikings were totally different and worked in tribes.. efficient ships, intimidating war-tactics, skilful hand-to-hand combat, and fearlessness. made them powerful enemies. Oh its a difficult one...

Knights...just a matter of ages and technology. Knights that faced Vikings during the 7th century were rather primitive..while a 12 or 13th knight would have cut a Viking . a 7th century one. to pieces.

Come to think of it, I believe that Monty Python and the Holy Grail answered the OP's question.

"The Black Knight always triumphs!"
