OK I will play:

Aztec empire would have spread and conquered and assimiliated the tribes of North and South America, human sacrifices would be on mainstream TV ("Wheel of Fortune" would change to "Wheel of Sacrificial Heart Extraction"), both communism and democracy would be displaced by Sun God worship in the rest of the world, our current president would be named Donald J Tlatchaxiua, and since the wheel was never invented we would all be driving around in maglev automobiles.

The hopelessness of this question is illustrated by simply looking recent history.

In the year 1500, it was hardly obvious the England - a minor European kingdom - would within a few short centuries become the most globe-spanning empire the world has ever seen.

In 1750, the notion that thirteen British colonies wedged in the narrow strip of land between the Atlantic and the Appalachians, would become the most powerful nation the world within 200 years would have been absurd.

In 1917, the idea of backwards and imploding Russia becoming a global power within mere decades would have been laughable.

Projecting with any confidence the long-term prospects of individual Indian nations post-1492 absent a European presence? Utterly impossible.

You are essentially rewriting hundreds of years worth of history.

My take is that someone else would have eventually discovered and probably colonized the world. Perhaps native Americans would have come to Europe.
But they be repelled by the pestulants just like the Martians were in War of the Worlds

Its actually really easy to get to Alaska, and BC from Japan. There is a string of islands that leads north across to Aleutian Islands. I think the Mongol Empire would use Chinese Sailors and send out to explore. Mongols very progressive for their time.
Mongol empire was already collapsed, fragmented, and the remnants assimilated into local cultures by the end of the medieval age (about the time that Europe had the technology and the trading need to find another route to the east). They were no longer a player on the world stage.
Japan were isolated and as I stated were embroiled into an extended period of feudalism and warring states into pretty much the 19th century. They had neither the national capability or will for extended colonization.
There was simply no civilization in the east capable of exploration and colonization of any extent during that time period. Russia perhaps but I consider them a European power.
Who mentioned the Vikings? By the late medieval age even they were simply history...non-existent, pagan remnants of another age. Norway, Finland, Sweden, etc had there own kings and cultures and they were Christian nations.

There were Polynesian tribes that were excellent sea-farers and managed to settle much of the Pacific including Hawaii however. But technology wise they were at the same level as Native Americans of the time, or even less so. They did best at settling unoccupied islands.

Russia is both a part of Europe, and Asia. But most of the population resides in western European Russia.

America, meaning the USA?
the French would have colonized from Canada.

America, as in North America?
well, the Europeans would have started in South America and worked north.

America, like N&S America?
similar to Africa. all of it.

Africa is bigger than China, India, the contiguous U.S. and most of Europe—combined!
