How old is your house? Houses built for at least the last 20 years or so, probably longer, require metal plates in studs to protect wiring and plumbing in walls, in spots where they are ran through holes in studs and bottom/top plates. So it shouldn't be an issue, but when in doubt you could go to city hall and pull the blueprints for your home and make sure.
Are there any risks with crown moulding installation, such as hitting a pipe with a nail or electrical wires with a nail?
There's always a risk- but it is a slim one.
As Jalba noted above- there should be nail guards wherever holes were drilled within 1" of the face of a stud. or plate.
