The failure rate of restaurants is the highest there is.....50% in the first 3 years.
And that's a conservative number- I've always heard about 60%/3yr period.
1st yr- 25%+
2nd yr- 45-50%
A friend of mine wanted to open a restaurant, the SBA gave him those numbers.
I was in the restaurant world for quite a few years, its a young persons gig, the hours and stress are brutal.
I wish you luck in your venture, Please whatever you design take the noise level into consideration. I hate going to restaurants with friends and not being able to hear conversations because it is so noisy. There are good restaurants that I avoid just due to this reason.
Watch a few episodes of Restaurant Impossible before you go decorating a restaurant with a bunch of clutter. A restaurant should be sleek and easy to keep clean.
We go to a restaurant that is a dump. However, it came by being an authentic dump, naturally, over many years. It always gets an "A" on health inspections, although you couldn't tell from the inside. The ceiling is covered with 60s album covers, and old dollar bills are stapled on the walls. It has charm because its authentic.
You can't fake this, so I wouldn't try.
