Cutting then down has nothing to do with the size. Those sizes refer to the size of the "stock" being used. The majority is made from 1/2" stock (that is 1/2" square solid steel). Other patterns are made from 9/16" stock.

From a visual perspective 1/16" may not be a lot; but from a structural perspective it can make a lot of difference. 9/16" stock is used a lot for exterior wrought iron railings.
