Have several sets of Corelle. Not because I am THAT crazy about them, but, because you cannot destroy them! Before they get all ratty, I get tired of them. In their defense, in addition to being indestructible, they are economical & fit into the cabinets better than heavier, clunkier stuff.
The problem with sets is they usually come with cup and saucers instead of mugs. I would get my pieces a la carte at stores like Bed Bath & Beyond, Pier One, World Market, Williams Sonoma, antique stores, or online etc.
I know OP wants plain white, but I have always used Johnson Bros Blue Willow, which has been around forever and I can always buy replacement pieces, mixed with plain white ironstone. I like to find the real old Buffalo china ironstone, and it makes no difference if the white designs are a bit different. I like this better than if they matched. The old heavy white diner china is practically unbreakable, whereas the dishes you get new from stores will chip and break more easily.
PS I just now went to ebay and scored 4 Buffalo china salad plates and a platter for $17. Can't wait to get them.

I bought 2 sets from Ikeas about 7 years ago as my temporary dishes. They are still going strong and really like them. For a new vacation home we just bought I purchased 2 sets of all white dishes with mugs from JC Penneys - they were 19.99 on sale and I am very pleased with them. I just put in an order for 2 more sets so we have extras and no one has to do dishes daily. For my serving bowls etc., I shop at places like TJ Maxx for items that have some color and style to them. You can often buy pieces for less then $10.00 that, when paired with the blank slate of white dishes, can make your dinner table look like a million for very little money.
Another one here that uses Corelle plain white day to day (great for when you have kids or are just a klutz like me who drops stuff). I bought them open stock from an outlet store during a half off sale. I love the smaller dinner plates and different sizes for bowls etc. I hate massive dinner plates when you put normal sized portions of food on them.
Another vote for Fiesta here. I did not like the mugs that came in their 4 piece set so I bought my pieces individually. I bought at least half of it on black Friday at Macy's and saved quite a bit of money.
Great quality, lots of options as far as pieces and colors go, and made in America.
Corelle here. You can find it in thrift stores and yard sales. It's glass but doesn't break. It cleans really well. It's lightweight. You can use it in the microwave. It's lightweight. It has loads of pieces that go with it, whatever you want--for the vintage pieces at least, you can find matching mixing bowls, mugs, just about anything. In all the years I've had mine I've broken ONE piece and that was when it just dropped straight down onto the kitchen floor and split into pieces. Other dishes were constantly chipping and breaking. This is attractive and will last just about forever.
Corelle here too. We have 2 sets, one for each house. The last setting of 60 pieces we got at an estate sale in perfect condition for $30.00. The 1st set was bought at a Tanger Outlet store for $49.95 for a 56 piece set.
