My wife likes Option (F) (Moen Eva) since she thinks it matches the hanging lights over the peninsula better. Watching the Moen installation video makes it look easy enough.
Re backsplash, there are 7 electric plug in/switch wall plates. Is your kitchen going to have as many? That will make any backsplash look too busy and awful. Whatever you do, try to get those wall plates to blend in and not stick out.

Yeah, that's the actual kitchen. I had been thinking of replacing the face plates of the electrical outlets with stainless steel covers.
If you use stainless steel plates they will still stick out. Think about blending in so they go away and are not all that noticeable. Or you will have a hopscotch pattern no matter what nice plates you have and they will get all the (negative) attention and ruin the kitchen.
