Dark stainless has been around for a while now, so I don't think it has really caught on. I think it blends in too much with dark cabinetry, and is too mismatched for light cabinetry. You can say what you want about regular stainless steel, but it pops against any type/color of cabinetry, which probably accounts for its popularity. It's versatile.
Stainless steel isn't a problem. I think sometimes people mistake getting tired of stainless for the fact that they're really tired of their kitchen design.
Good kitchen design and attractive finishes affect how you feel about a kitchen more than whether the appliances are stainless.
That said, I do love enamel finishes in pretty colors. They exist, but you rarely see them.
We have friends that went with the slate appliances and I love the way it looks. Black would be nice if the cabinets weren't too dark.
I just had my slate appliances delivered and I love them. Shopping for granite countertops now and it is hard to decide, so many granites pair well with slate.
I bought the GE slate refrigerator, and now Home Depot has the matching dishwasher on sale so I think I'll get that this week. Good suggestion on donating the old appliances. That way I don't have to bother selling them and I can write them off. The fridge was pretty old, but the stove, microwave and dishwasher are all from 2014. Their only fault is they are bisque.
I think the slate kind of changes color with lighting during the day and evening. I'm really liking the color and I think it looks classy.
We got a new (to us) 1953 Model 61C Chambers stove in yellow for about half what a new one would cost (incl. purchase, transport, refurbishment). The griddle and heat well are fantastic features.

My slate appliances look amazing with my new granite. The granite has shades of blue and gray and my sink is graphite composite granite.
The slate appliances do have a change of shade according to the light in the room, you are correct about that.
