We had our granite installed several years ago by a fairly high end fabricator. Their advice was great- Let the granite speak for itself, and go with the simpler edge designs. Spend your money on the higher level granite designs, and save the extra money on the edges. No one ever walks into your house and says "nice edges", you want to draw the attention to the fantastic colors in your actual counter tops.

I picked a square edge as I like clean and modern lines. Bullnose is more traditional.
I have been considering square edge as well. I've found that in the area where I live most people go with fancier edges but I don't care for most of them. The waterfall edge is very popular here and I don't care for it at all.
I always go with an eased edge. Gives me that squared off look I like but if there's a tiny chip or something on the edge, it won't be immediately obvious like on a fully squared off edge.
I mean just go with the edge that you like. We did bullnose since I don't care for sharp edges. I do like Pencil though but not enough to spend $$$ per foot for it.

The granite fabricator I am using offers pencil or eased at no extra charge, all other edges have upgrade charges.

I guess each fabricator has its own "standard edges". That's good that one of the standard edges is pencil!
I suppose it also comes down to the style of your home. I've seen more contemporary/modern homes with bullnose, waterfall, or eased. I've seen more traditional homes with pencil. Not set in stone, though.
