I am not that handy, but painting wall should be easy.

Attached: I think there are some paint coming with the purpose of prime. You can just paint it, it serves as both prime and paint. When I painted interior walls (not wood panel) last year, home depot employee told me so.

Personally, I like the look of painted paneling and the added texture it gives.

Honestly I think the best way to get this all done properly is to hire someone who knows how to do the job properly.

That is not exactly true. Even if hiring a contractor, you need to tell contractor how you want to get it done. I would not trust contractor's opinion, sometimes they just want to make their job easy.
