I don't know if I'm seeing the colors as they really are, but on my monitor it looks like some kind of terra cotta in there and that's the direction I'd go. Or a color that contrasts nicely and brings out the terra cotta and goes with the floor. But I like color, so would want more than I see in the palette you have now.

If your counter is that mottled granite, choose a less busy backsplash. White or other neutral subway tiles would be perfect in this setting.

Agree with Silbran.

Since you have a strongly patterned counter, it both dictates your options and makes your choice easy.

Choose a plain tile. Your cabinets look more ivory than stark white, so choose a tile that is off-white.

Get some samples and prop them up against the backsplash.

the kitchen is 100% a stark white cabinets. I've decided to go with the subway tile that is crisscrossed that has a tint of grey

Perhaps nothing at all- since you most likely won't be adding the dormer. Which means you'll be selling and finding a house that meets your current needs, and will cover future needs.
