Got the electronic sensor replaced with a new one, didn't work.
Which from my understanding leaves two possibilities 1) replace the control panel or 2) it could be a gas problem which I doubt b/c the usual signs aren't there.
Surely they can perform a test to determine which exactly is the problem?
Depends on the style of the fridge, the age of the controls and even your usage .It might related to the defrost function. Often the timer for the defrost heater goes bad and that tricks the thermostat into trying to compensate by making the whole thing colder. Could also be plugged up / frozen drain lines. Could also be that you are allowing too much moisture to enter the fridge.
Smarter appliance repair people can do better diagnostics...
A few thermostat controls require that you turn them all the way up or all the way down, then to the level of cooling you want. Been a while since I have seen one.
I would suggest springing for a couple of thermometers, you can find them purpose-built and not very expensive, put one in the fridge compartment and one in the freezer, so you can tell if you have an over-cooling problem overall or a distribution problem (in your case too much cooling in the fridge vs the freezer)
