Be advised that mice can and will chew right through plastic tubs.

OP - However much space you "think" you need won't be nearly enough. Ask anyone you know or see around the neighborhood if they feel their shed is big enough and you'll see what I mean.

True, but not as quickly as through trash bags.

When I was planning to build my storage shed about 10 years ago, the neighbor told me to stack everything I planned to store in it out on the driveway, measure the space it took and multiply it by 4. Then, if I built it that size, figure that in a couple of years I would wish I would have built it twice as big. I didn't follow those suggestions exactly, but I definitely wish I had built it bigger than I did.

But probably faster than you will be checking it :-) Only thing I've found that is varmint proof is some 20mm Ammo Cans I 'acquired' when I was in the Air Force. Nice steel with good rubber seals. The problem is you put stuff in the shed then it is 'out of sight out of mind' for weeks or months at a time. Then you open the door find water has seeped in the groundline, bugs have crawled in from who knows where, the summer heat has melted or dried things out or mildew/mold has grown if it wasn't too dry to dry things out.

You mentioned you were out in the boonies. Have you looked into a cargo container (Sea Container) I've heard they can be reasonably priced can be checked for leaks, etc. before being filled up and give a pretty good amount of storage. They come in several lengths.

recently ordered and put together a Steel building I got off Homedepot.com. Hands down best quality/designed storage building ive ever seen. I got the 10x11 "standard" and its suiting all my needs and more. isn't like most metal sheds, as its 18 gauge steel that is powder coated, also has a 40 year warranty. I highly recommend this building to my own family and anyone else.
