I never minded electric but when we remodeled the kitchen 15 years ago I wanted gas. It's been great but there are a few downsides like the sticky residue it leaves over time and the fact that an open flame means exercising way more caution. Next time I upgrade I'll go with induction or whatever the "newest thing" is.
Gas ! You can cook when the power is off ! And I prefer a gas oven to an electric because when I make pizzas, the electric doesn't burn off the moisture and it's harder to get a crisp crust (and that's a major thing in my life).
Induction cook top and electric wall ovens. Second choice, induction stove.
Why?
Control almost as fast a gas. For all practical purposes they are the same.
By far the easiest to clean. No contest at all.
Induction can't blow your house up.
I don't know anyone who has chosen electric over gas - most of us using electric simply don't have the choice. But now that I'm reading about the induction, I'm kind of wishing I'd paid more attention and looked at those when replacing my electric stove last year!
I love my vintage gas stove! There was a propane stove here already when I bought the house, but I wanted an older stove to fit better with my vintage red-and-white kitchen. We have no natural gas in the area, so I got a 500 gal. propane tank to service the stove, water heater, gas fireplace (I installed that too), and the 15 KW generator. It's nice being prepared for storms or blizzards, believe me. And that old stove cooks like a champ, plus I can "raise" bread in it, since it has a constant pilot.
