Induction here. The best in my opinion.

I never minded electric but when we remodeled the kitchen 15 years ago I wanted gas. It's been great but there are a few downsides like the sticky residue it leaves over time and the fact that an open flame means exercising way more caution. Next time I upgrade I'll go with induction or whatever the "newest thing" is.

Wow, We're not the only ones! Best thing is she's a great, messy cook and the induction burner is easiest to clean.

Do you find it's more like gas or electric?

Exactly. My favourite advantage! LOL!

I'm OK with an electric oven. But on the stove top, has to be gas. I'd never go back to electric.

Induction cook top and electric wall ovens. Second choice, induction stove.

Why?

Control almost as fast a gas. For all practical purposes they are the same.
By far the easiest to clean. No contest at all.
Induction can't blow your house up.

I don't know anyone who has chosen electric over gas - most of us using electric simply don't have the choice. But now that I'm reading about the induction, I'm kind of wishing I'd paid more attention and looked at those when replacing my electric stove last year!

More like gas.

Instant up and down. No residual heat. Heats REALLY quickly.

I love my vintage gas stove! There was a propane stove here already when I bought the house, but I wanted an older stove to fit better with my vintage red-and-white kitchen. We have no natural gas in the area, so I got a 500 gal. propane tank to service the stove, water heater, gas fireplace (I installed that too), and the 15 KW generator. It's nice being prepared for storms or blizzards, believe me. And that old stove cooks like a champ, plus I can "raise" bread in it, since it has a constant pilot.
