How crucial is it to seal a stone backsplash in a kitchen?

It will change the color and make all the stones about four shades darker and I really like it the way it is now. Aside from dumping tomato sauce on it, will it really make a difference in protecting the stones?

Time will show you that the color will change just from cooking. I don't care what you do short of covering it with plastic, it will get dirty. In time, the color will change. You can seal it now and it will be easier to clean and keep the color it turns after sealing.
thinking about it, there are sealers that are clear and will not change the color. Explore the types of sealer out there.
