We will be putting in a tile backsplash in the kitchen this year. The upper cupboard ends a few inches from the end of the counter, and the counter ends a few inches from the door trim. Not sure if there is a proper place to end it, or it's personal preference. I presume we would end it at the same point as the counter ends, but then there will be a weird corner of tile sticking out past the cupboard.

It makes sense to me. I'd end it at the counter top. I don't think anyone will ever notice the tiny edge of tile sticking out past the cupboard.
By the way, this question made me get up and go look at ours - LOL. One corner by one doorway lines up perfectly with the upper cabinet and the counter. Across the room, it doesn't line up exactly and the back splash extends about 1/2 an inch beyond the upper cabinet edge. I literally never noticed this till today! It looks fine.
We ended ours at the end of the counter top. I think it looks weird when people go past it. In your case it would go just a little past the cabinet, but if you stopped at the cabinet it would also look weird.
I prefer ending it at the edge of the wall cabinet. If the cabinets were installed correctly the base and wall cabinet should align. That leaves the one inch (if there is in-fact that much room left) overhang; perfectly acceptable.
So this new tile will go all the way up to the cabinets? If ending a few inches from the door trim means back to front measurement of the countertop and that the countertop goes to the side wall (hard to tell in the pic)...I would put the tile around the back and the side wall. The decorative idea, however practically applied, is to sort of guard any damage to the walls from anything done on the counter top. There are pieces of tile that are long and narrow and also rounded long pieces that go on ends and exposed tops such as along the top of the tile you'd put on the side wall.
I've seen it on lots of situations like your and have it on mine.
There really is no "wrong" way for the tile to end as long as it has a relationship to some other "end point".
This "end point" can be
1) the counter backsplash (the existence of which, technically, eliminates the need for tile),
2) the wall cabinet,
3) the projected termination of the base cabinet (ignoring the countertop overhang...to which the wall cabinet should be aligned), or
4) the door frame; in which case one might want to carry the tile down to the floor and up to the ceiling (making the tile an entire wall treatment) or, at least, up past the area of wall seen through the microwave shelf.
Recently we had to make the same decision and since the cabinets are farther out than the counter, we went with the end of the cabinets for backsplash. Thought it would look goofy if we went with the end of new countertop. Turned out great.
